Pistachio Breakfast Parfait

I love pistachios. I’d love them for their deliciousness alone, but pistachios are so much more than that. They are one of the lowest calorie and lowest fat snack nuts, making them a great choice for mindful snacking. Their impressive color isn’t just pretty– those green and red-purple hues come from antioxidants. Pistachios are also one of the highest protein and fiber snack nuts that are part of a heart-healthy lifestyle. Scientific evidence suggests but not prove that eating 1.5 ounces per day of most nuts, such as pistachios, as part of a diet low in saturated fat and cholesterol may reduce the risk of heart disease.
This breakfast parfait is a perfect way to start the day– or for a sweet snack at any time!
- ½ cup Greek yogurt
- 1 tablespoon honey
- ¼ cup oats or granola
- 1 oz. Wonderful Pistachios, crushed
- 2 tablespoons dried cranberries
- Combine the yogurt and honey.
- In a bowl or parfait glass, add half of the yogurt/honey mixture.
- Sprinkle half of the oats, pistachios, and cranberries on top.
- Add another layer of the yogurt, then top with the remaining oats, pistachios, and cranberries.
