Cinnamon Bun Baked Oatmeal

There aren’t many things I hate baking, but cinnamon buns are one of them. That’s unfortunate, because I love eating them! 🙂

This cinnamon bun baked oatmeal is an easy alternative, taking the lovely, cozy flavor of cinnamon buns and putting it into a quicker, more nutritious package– perfect for breakfast!


Cinnamon Bun Baked Oatmeal

Yield: 1 serving

Ingredients

  • ½ cup oats
  • ¼ cup milk
  • 2 tablespoons Greek yogurt
  • 1 tablespoons cream cheese
  • ½ teaspoon vanilla extract
  • 2-4 tablespoons granulated sweetener, to taste
  • 1 teaspoon cinnamon
  • ¼ teaspoon baking powder
  • pinch of salt
    for the glaze:
  • 2 tablespoons Greek yogurt
  • 1 tablespoon milk
  • ¼ teaspoon vanilla extract
  • sweetener to taste

Instructions

  1. Preheat your oven to 350 and grease a ramekin or small ovenproof dish with cooking spray.
  2. Combine the oats, milk, yogurt, cream cheese, and vanilla.
  3. Stir in the sweetener, cinnamon, baking powder, and salt.
  4. Pour the oatmeal into the ramekin and bake for 20-25 minutes, or until set.
  5. While the oatmeal is baking, make the glaze: combine the yogurt, milk, and vanilla, and sweeten to taste.
  6. Before serving, top the oatmeal with the glaze and sprinkle with more cinnamon, as desired.
