Mini Fruit Crisps

I love a good fruit crisp. One of my favorite memories of growing up is making many, many apple crisps with my mom.

As much fun as it was, and as treasured a memory as it is, sometimes I want to enjoy a fruit crisp without quite as much work.

Mini Fruit Crisps

Yield: 4 servings

Ingredients

  • 1 can Libby's Sliced Pears, Sliced Peaches, or Apricot Halves, drained and chopped
  • 1 teaspoon cinnamon
  • ½ teaspoon ground ginger
  • sweetener to taste
    for the topping:
  • ½ cup oats
  • ¼ cup oat flour
  • 3 tablespoons brown sugar
  • 1 tablespoon unsweetened applesauce
  • 1 tablespoon coconut oil, melted

Instructions

  1. Preheat your oven to 350° and grease four ramekins or small oven-safe dishes with cooking spray.
  2. In a mixing bowl, combine the fruit, cinnamon, ginger, and sweetener, then divide among the ramekins.
  3. Combine the oats, oat flour, brown sugar, applesauce, and oil until a crumble forms, then sprinkle over the fruit.
  4. Bake for 30-35 minutes.
