Chocolate Cheesecake Quesadilla

Valentine’s Day is quickly approaching, and with it, the obligation to eat as much chocolate as you can handle. Whether you love the holiday itself or not, chocolate can be the great unifier.

I’m a big fan of dessert quesadillas in general, but this chocolate cheesecake quesadillaΒ is so rich and sweet that it’sΒ perfect for special occasions– especially as a quick treat without all of the fuss that comes with baking something more elaborate.Β Or you can just eat it alongside the other, trickier things. That works, too. πŸ˜‰ Brownies, cookies, candy, chocolate cheesecake quesadillas… I fully intend to be 90% chocolate on the 14th.

Double it to share with someone special… or just keep them both for yourself!

Chocolate Cheesecake Quesadilla

Yield: 1 serving

  • 1 tortilla
  • 2 tablespoons cream cheese
  • 1 tablespoon unsweetened cocoa powder
  • 2 tablespoons chocolate chips

  1. Mix the cream cheese and cocoa powder together until combined, then spread evenly over one half of the tortilla.
  2. Layer the chocolate chips over the cream cheese.
  3. Grease a pan with cooking spray. Fold the tortilla and cook over medium heat until both sides have browned and the chocolate chips have melted.

This recipe is gluten-free with the appropriate tortilla, and vegan with the appropriate cream cheese and chocolate chips.

Thinking Out Loud

  1. Currently Reading: Multiple Choice by Alejandro Zambra
  2. Where do we all fall on Valentine’s day? I’m fairly indifferent to the day itself, but I do like all of the chocolate. And hey, I will jump at any excuse to make a cake, so cake shall be made!
  3. Good news, book nerds: Goodreads is going to to start counting rereads!
  4. I’ve probably asked before, but do you like rereading? I love it– there’s something so comforting about revisiting an old favorite– but also feel guilty about not reading something new. Is there a book that you find yourself reading over and over again?
  5. Recipes that caught my eye this week:

Um, yum! I love the chocolate/cream cheese combo. I feel the same way about Valentine’s Day. I could do without it, but it’s a good day for making chocolate desserts (like this recipe), so I’ll take it. πŸ™‚ Thanks for sharing!

  2. Emily says:

I’m definitely all for making something chocolatey on Valentine’s Day. I love celebrating love every day, but Valentine’s Day just gives us an excuse to make EXTRA for our families.

  3. Kimmythevegan says:

Holy moly this looks YUMMY! Way to combine sweet & savoury flavours. This would make a great breakfast or treat =)
#2. I’m conflicted about Valentine’s Day. I grew with a dad who made a HUGE deal of it. He would send me, my mom & sister each flowers and buy us candy & chocolates and other things. Super spoiled. Buuuut my husband is not into it. So I’m trying to find the balance there πŸ˜‰
    #3. YAY! I’m excited about this =)
#4. I used to reread more until I got onto GoodReads and then figured it wouldn’t count towards my reading goals, so I stopped, but that’s been fixed. I do reread the Twilight books each and every year around my birthday (yes… lame, I know haha).
    Happy Valentine’s Day Courtney!

      Thank you!
Haha, I have a handful of books I try to read every year, so I know how that is. I’ve read The Westing Game every single year since I was 10… so it’s been a long time now. πŸ˜‰
      Happy Valentine’s Day, Kimmy!

I’ve never had a dessert quesadilla, but this looks great! I nearly always have tortillas on hand, so I’ll be sure to try this the next time I’ve got a hankering for something sweet but don’t have any baked goods in the house πŸ™‚
