Apple Cheddar Quesadillas

You’ve tried apples with cheese, right?

Apples and cheddar cheese work so wonderfully together. The sharpness of the cheddar brings out the sweetness of the apple, and the combination is an unexpectedly delicious way to shake up your usual quesadillas.

My enthusiasm for quesadillas of all kinds is well-documented here– from my lunchtime favorite avocado tomato quesadillas to fun, dessert apple pie quesadillas.Β IΒ certainly haven’t beenΒ shy about sharing my love for all things– and flavors– autumn. My lunches from here until Thanksgiving will be heavy on the pumpkin, squash, and apples, and these apple cheddar quesadillas are a particular favorite.

I’m lucky enough to live near an apple orchard, and a bushel of fresh honeycrisp apples is a big part of my family’s autumn traditions. They are especially nice here– but your favorite sweet variety will work, too. πŸ™‚


Apple Cheddar Quesadillas

Yield: 2 servings

Ingredients

  • 2 tortillas
  • ΒΌ cup Greek yogurt
  • ΒΌ teaspoon cumin
  • 1 apple, thinly sliced
  • Β½ onion, sliced
  • Β½ cup shredded cheddar or cheddar-style cheese
  • add-ins of choice-- jalapeno peppers, olives, etc. (optional)

Instructions

  1. Combine the Greek yogurt with the cumin and spread evenly between the tortillas.
  2. Layer the apples and onions over this mixture and sprinkle with cheese.
  3. Add peppers, olives, etc. if desired.
  4. Grease a pan with cooking spray. Fold your tortillas and cook one at a time over medium heat until the cheese melts and the tortilla is browned on both sides.

This recipe is gluten-free with the appropriate tortillas and vegan with the appropriate yogurt.
