These quick and easy apple cinnamon energy bites are a wonderfully wholesome snack that tastes like a little piece of autumn!

In my fall frenzy to eat ALL of the pumpkin, I sometimes neglect one of the other glorious things about autumn– APPLES.

Apples are amazing– high in fiber and low in calories and cholesterol, they are a fantastic and healthy choice at any time. Mix them with some cinnamon and you have one of the most quintessential flavors (and smells!) of the season.

While I’m usually using my fresh apples in a million different delicious desserts, I don’t want my snacks to feel left out of the seasonal goodness. I’m not going to lie to you, dried apples are nowhere near as delicious as fresh ones, but they are perfect for this recipe. These energy bites taste like my favorite fall treats, but in a healthy and snackable form.


Apple Cinnamon Energy Bites

Yield: 10-12 bites

Ingredients

  • 1 cup dried apples
  • ½ cup dried dates
  • ¼ cup oats
  • ¼ cup walnuts
  • ½-1 teaspoon cinnamon
  • 1 tablespoon water, if needed

Instructions

  1. Add the apples, dates, oats, walnuts, and cinnamon to the bowl of a food processor and combine until it forms a sticky, crumbly mixture.
  2. Form the mixture into balls or bars.
  3. If the mix doesn't hold together, add up to a tablespoon of water until it does.

This recipe is gluten-free with the appropriate oats.

      Hi, Dawn! I usually buy my dried apples at Aldi or Giant Eagle (they’re usually around the same place they stock dried cranberries and other fruit), but I think places like Walmart have them as well, and they can also be ordered off of Amazon. I’ve never made my own, but you can with a food dehydrator or oven. 🙂
