A lot of my recipes are vegan. It’s a happy accident– a lot of what I naturally enjoy eating and cooking with is plant-based, or easily made so. I don’t think I could ever go completely vegan, though, because I would miss eggs too much.

I love eggs– scrambled, fried, baked, hard boiled… there are so many yummy things to do with them. They are a great source of high-quality vegetarian protein, and naturally contain many essential nutrients, including iron and vitamin D.

This is one of my favorite go-to breakfasts for the weekend. Eggs always feel like aΒ weekend breakfastΒ toΒ me– for no real reason but habit, it’s when I tend to eat them, and I associate them with the slightly slower and calmer feel of mornings away from work. I love the garlicky greens here– they are so quick and easy to make, but they add so much flavor and nutrition. I especially like to pair this breakfast with one (or more!) of my cheesy zucchini muffins. Mornings are always better with a happy belly! πŸ™‚
