A good breakfast is an essential start to the day, and these fried eggs with garlicky greens are an ideal choice– quick, easy, nutritious, and delicious!
A lot of my recipes are vegan. It’s a happy accident– a lot of what I naturally enjoy eating and cooking with is plant-based, or easily made so. I don’t think I could ever go completely vegan, though, because I would miss eggs too much.
I love eggs– scrambled, fried, baked, hard boiled… there are so many yummy things to do with them. They are a great source of high-quality vegetarian protein, and naturally contain many essential nutrients, including iron and vitamin D.
This is one of my favorite go-to breakfasts for the weekend. Eggs always feel like a weekend breakfast to me– for no real reason but habit, it’s when I tend to eat them, and I associate them with the slightly slower and calmer feel of mornings away from work. I love the garlicky greens here– they are so quick and easy to make, but they add so much flavor and nutrition. I especially like to pair this breakfast with one (or more!) of my cheesy zucchini muffins. Mornings are always better with a happy belly! 🙂
- 2 eggs
- 2 cups fresh greens of choice (spinach, kale, arugula, etc.)
- 1 teaspoon minced garlic
- salt and pepper to taste
- a few splashes of soy sauce, to taste
- Grease a pan with cooking spray and fry your eggs.
- While the eggs are cooking, sauté the greens in garlic, salt, and pepper until wilted.
- Top your eggs with the cooked greens, then add a few splashes of soy sauce as desired.
To keep this gluten-free, make sure you are using an appropriate soy sauce.
