It’s almost unfair when recipes that are this simple taste so good.

You can spend an incredible amount of time making big, elaborate meals, and then you slap something on bread and wonder why you even bother. 😉 Things on toast: almost always deliciously foolproof.

This tomato and onion toast doesn’t sound like it should be as yummy as it is– it’s three ingredients and some seasoning– but it works so well. Sautéed onions are basically magical, and they are complemented perfectly by the tomatoes.

Tomatoes had to grow on me. I hated them as a kid and would only ever touch them in sauce form. I love them now, though– I can just bite into one and eat it like an apple. I’m glad I came around, because tomatoes are great for you.  They are a good source of vitamin C, potassium, vitamin K, and folate, and they’re a major source of the antioxidant lycopene, which has been linked to a reduced risk of heart disease and cancer.

Simple, healthy, and yummy– the best of all worlds.


Tomato and Onion Toast

Serving Size: 2-4 servings

Ingredients

  • 2-4 slices bread of choice (I like rye)
  • 2 Roma tomatoes, sliced
  • 1 onion, chopped
  • salt, pepper, and garlic powder, to taste

Instructions

  1. Toast your bread (grilling is great, too!).
  2. Sauté the chopped onion in salt, pepper, and garlic powder.
  3. Top the bread with the sautéed onions and sliced tomatoes.
  4. Adjust seasonings to taste.

    Yea! I was never too too big on tomatoes growing up, but now..I love them (they just don’t love me!)
    And I always feel silly with some of the easy recipes…but if it tastes so good…I have to post! (And those end up being the most popular on the blog anyway! Haha!)

    I admit, I never would have considered tomatoes or onions on toast. I’m more of a jelly/butter kind of gal. Having said that, this looks awesome and I think you may have converted me.

    I agree about sauteed onions.. magic. I have a bunch of garden cherry tomatoes, no one else home for dinner tonight besides me, I think this is what i will have. Maybe toss in a little bacon “for protein” 🙂 (visiting from #BragAboutIt)

    This will give me something to do with those leftover tomatoes and onions that I never know what to do with. And I can make it just for me since my husband doesn’t like tomatoes! It also has me saying, “Why didn’t I think of that?” Haha
