I don’t even know which of the three ways is my favorite– they’re all slightly different but equally delicious. It all comes down to convenience. Overnight oats are great when you’re short on time, since all the work is done the night before. I tend to use my baked oatmeals that way, too– I make them in advance, freeze them, and heat them up on busy mornings. Making this on the stove doesn’t take long at all, though, and there’s something so comforting about a good, traditionally-made oatmeal.

I like to eat this warmed up, but the overnight version is amazing cold, too. You can’t go wrong with a banana split!

Banana Split Oatmeal - Stovetop Version

Ingredients:
– ½ cup oats
– 1 cup milk of choice
– dash salt
– sweetener to taste
– 1 banana, divided
– ½ teaspoon vanilla extract
– chocolate chips
– fresh or dried cherries or strawberries

Instructions:
1. In a saucepan, bring the oats, milk, and salt to a boil.
2. Reduce heat to medium. Mash half of your banana and stir it in.
3. Continue to stir, cooking to desired consistency.
4. Remove from heat, transfer to bowl, and stir in sweetener and vanilla extract.
5. Slice the other half of your banana and layer the slices on top. Sprinkle with chocolate chips and cherries/strawberries.

Banana Split Oatmeal - Baked Version

Ingredients:
– ½ cup oats
– 2 tablespoons milk of choice
– 2 tablespoons Greek yogurt, or more milk
– 1 banana, mashed
– sweetener to taste
– ½ teaspoon vanilla extract
– ¼ teaspoon baking powder
– dash salt
– chocolate chips
– fresh or dried cherries or strawberries

Instructions:
1. Preheat oven to 350° and grease a ramekin or small oven-safe dish with cooking spray.
2. In a bowl, combine the oats through salt.
3. Transfer to prepared dish and top with chocolate chips and cherries/strawberries.
4. Bake 20-25 minutes or until done.

Banana Split Oatmeal - Overnight Version

Ingredients:
– ½ cup oats
– ¼ cup Greek yogurt
– 2 tablespoons milk of choice
– 1 teaspoon chia seeds (optional, but recommended!)
– ½ teaspoon vanilla extract
– dash salt
– sweetener to taste
– chocolate chips
– fresh or dried cherries or strawberries
– 1 banana, sliced or mashed

Instructions:
1. In a bowl or jar, combine the oats through cherries/strawberries.
2. Cover and refrigerate overnight.
3. When ready to eat, stir in mashed or sliced banana.

    Ahh, this sounds all sorts of amazing! Banana splits = my favorite dessert to share with my mom when we go on mother-daughter outings, hehe. :] I’ll have to make this version sometime for us! :] I love that you included so many different versions!
