You don’t really have to sell mac and cheese– it’s mac and cheese and it sells itself– but this is also super customizable. Use shells instead! Add veggies! Shake it up and go crazy with your spices! Use whatever cheese you want– shredded of any variety, cream cheese, cottage cheese, a slice of American… your possibilities are endless.


One-Pot Mac & Cheese for One

Yield: 1 serving

Ingredients

  • Β½ cup dry elbow macaroni or small shells
  • 1 cup water
  • ΒΌ teaspoon salt
  • 2 tablespoons milk or Greek yogurt
  • ΒΌ-Β½ cup cheese of choice
  • ΒΌ teaspoon garlic powder
  • salt and pepper to taste

Instructions

  1. Combine pasta, water, and salt in a saucepan and bring to a boil.
  2. Stir regularly until your pasta is cooked-- around 8 minutes. Once it is done and most or all of the water has boiled off, reduce heat to low and add your milk/yogurt, cheese, and garlic.
  3. Stir until the cheese has melted, then season to taste.

This recipe is vegan with the appropriate milk and cheese.

    Yum! I love that this is a one-serving version. I love mac and cheese but don’t eat it often because it’s so high in carbs. This way I can have a serving to curb the craving but not have a whole batch of it in the house!

    Oh yeah, this looks like lunch! Making mac n’ cheese is not rocket science, but having this recipe with measurements will prevent me from cooking a family-sized portion (it’s a bad habit), so I CAN eat the whole thing and not feel miserable! Thanks!
